Unsalted butter or vegetable oil can be used to replace ghee.

Chicken Tikka Masala Recipe
Ingredients
- 1 kg chopped boneless skinless chicken
- 100 grams plain yogurt
- 1 tablespoon garam masala
- 1 tablespoon coriander powder
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
- 2 medium-size chopped onions
- 1 tablespoon ground ginger
- 1 teaspoon minced garlic
- 1 tablespoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon ground fenugreek
- 2 teaspoons black pepper powder
- 1/4 teaspoon salt
- 1 cup tomato pureed
- 1/2 cup fresh chopped cilantro
- 1/2 cup fresh chopped spring onions
- salt to taste
Instructions
Chicken Tikka
- In a large bowl, add the yogurt, garam masala, coriander powder, black pepper powder, salt, chicken pieces, and mix and marinate well.
- Cover it and refrigerate it for at least 60-120 minutes.
- Heat a barbecue, Tawa, tandoor, saucepan, or a griller on high flame.
- Grease your cookware with unsalted butter and gently pierce chicken pieces onto bbq skewers.
- Grill all the chicken pieces on both sides for about 5 minutes till smoky on each side.
- Chicken tikka is ready. You can serve them as it is with onion salad and eat with a fork and mint-cilantro chutney (dip).
Chicken Tikka Masala
- Now, in a large saucepan, add unsalted butter saucepan and saute onions until soft.
- Add the ginger, garlic, cumin powder, cinnamon, fenugreek, and mix well and cook for 2 minutes.
- Add pureed tomato paste and salt, cook for 3 more minutes while stirring.
- Now, add grilled chicken pieces and mix everything well.
- Simmer the chicken on low flame while stirring frequently.
- Cook for about 20 to 25 minutes until chicken gets tender.
- Chicken tikka masala is ready.
- Garnish with cilantro, spring onions, and serve with onion salad, chapati, naan, roti, or basmati rice.
