Easy Egg Curry Recipe

Egg Curry Ingredients
- 4-6 large boiled eggs
- 1 tablespoon olive oil
- 2 medium-sized chopped onions
- 3 medium chopped tomatoes
- 2 green chopped chili (optional)
- 1 teaspoon ginger-garlic paste
- 1 tablespoon desiccated coconut powder
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon Kashmiri red chili powder
- 1/4 teaspoon garam masala
- 1 teaspoon roasted cumin powder
- 1 teaspoon kitchen king masala or chicken masala
- 1 tablespoon coriander powder
- water as required
- chopped cilantro
- salt to taste

Egg Curry Recipe
- Take boiled eggs in a bowl and coat them with 1/4 teaspoon each red chili powder, turmeric powder, salt.
- Heat 1 teaspoon olive oil in a nonstick pan on medium flame and roast all eggs for 1 minute.
- Take them out on a plate and keep aside.
- Now in the same nonstick pan add remaining oil and heat it on medium flame.
- Once the oil is heated, add chopped onions and cook until light brown.
- Add ginger-garlic paste, green chili, desiccated coconut powder, cumin powder, kitchen king masala or chicken masala and cook for another 3 minutes.
- Add chopped tomatoes and mix well.
- You can also use tomato puree.
- Add salt and cook for 5 minutes on medium flame till tomatoes turn soft.
- Then add Kashmiri red chili powder, turmeric powder, coriander powder, and garam masala and cook for another 10 minutes.
- Stir in between so tomatoes and spices are cooked perfectly.
- Now add a cup of water and simmer till the consistency of curry gets thicker.
- Now add dried fenugreek leaves before adding eggs.
- Then add eggs and mix well.
- Simmer the egg curry for 5 minutes on low flame.
- Take out in a serving bowl and garnish with chopped cilantro.
- Serve egg curry hot with rice or flatbread.
