This healthy Indian chicken curry recipe is a versatile aromatic chicken gravy meal cooked in hot spices, coconut milk, veggies, and perfect for a family lunch or dinner. Chicken curry is served with steamed rice or chapati.

Chicken Curry Ingredients

  1. 500 g chicken, cut in big pieces, skinless
  2. 1 onion, finely chopped
  3. 1 tomato, finely chopped
  4. 3-4 tablespoon coconut milk
  5. 1 teaspoon red chili powder
  6. 1 teaspoon coriander powder
  7. 1/2 teaspoon turmeric powder
  8. 1 teaspoon cumin powder
  9. 2 tablespoon vegetable oil
  10. 1 teaspoon minced garlic
  11. 1 teaspoon minced ginger
  12. 1 teaspoon garam masala
  13. 2 tablespoon chicken masala
  14. a handful of chopped fresh coriander leaves
  15. water as required

Instructions

  1. Clean and wash chicken and take it into a large bowl.
  2. Marinate chicken with red chili powder, cumin powder, coriander powder, and turmeric powder.
  3. Combine everything well and coat into chicken pieces.
  4. Cover and refrigerate this marinated chicken for at least 60 minutes.
  5. Heat oil in a pressure cooker or in a nonstick cooking pot over medium flame.
  6. Add onions, garlic, and ginger and cook for 2-3 minutes over medium flame.
  7. Then add chopped tomatoes and salt and cook till oil surfaces on sides.
  8. Add chicken masala, garam masala, coconut milk, and cook for another one minute.
  9. Next, add marinated chicken and roast into all spices for 2 minutes.
  10. Add water as required, depending on the consistency of gravy you desire.
  11. Cover the pressure cooker or pot with a lid and simmer for 5 minutes or until chicken is tender and properly cooked.
  12. Garnish with chopped coriander leaves and serve hot with chapati or steamed rice.
