Vegetarian Stuffed Tomatoes Recipe
This is a cuisine of Turkey and Azerbaijan made with the stuffing of meat and rice. But people try it differently. They have their unique variations with it. Here we will be using the stuffing made with boiled peas, cottage cheese, and onions. Believe me, this recipe turned out to be very delicious without the use of meat and rice. This recipe goes well with rice, chappatis, naan, parathas, and bread. This dish is perfect for summer days.
Vegetarian Stuffed Tomatoes Recipe
- Wash the tomatoes and cut their tops.
- Scoop the pulp out of the tomatoes and keep them aside.
- Now we will begin with the stuffing preparation.
- In a shallow frying pan, add oil and heat it on medium flame.
- Add onion and saute them till light pink.
- Now add scooped tomato pulp to it and cook for 2 minutes.
- Add green chilies and mix well. Add all the dry spices and mix well.
- Now add cottage cheese and cook it on a medium flame for about 2-3 minutes.
- Fill the stuffing into the tomatoes with the help of a spoon.
- Now grease and place all these stuffed tomatoes in a microwave-safe tray.
- Grill the tomatoes for 10 minutes.
- Garnish with fresh coriander leaves.
- Vegetarian Stuffed Tomatoes Recipe is ready to serve hot with rice/chappatis/parathas.

- 200 gram chottage cheese
- fresh coriander leaves to garnish

- 1/2 teaspoon garam masala
- 1/2 teaspoon black peper
- 1 tablespoon oil
- salt as per your taste
