Healthy Fish Tacos With Mango Salsa

Ingredients

  • 1 pound albacore tuna seasoned with 1/4 teaspoon of each garlic powder onion powder, pink salt, oregano, thyme, chili flakes, black pepper
  • 1 ripe mango peeled and diced
  • 12 corn tortillas
  • 1/2 cup green onion minced
  • 1/4 cup red pepper
  • 1/2 cup mozzarella
  • 1/2 cup red onion minced
  • 1 fresh lime juiced
  • 1 minced jalapeno
  • salt as per taste
  • pepper as per taste
  • 1 teaspoon olive oil

Instructions

  • Preheat broiler pan on high flame. Line its borders with foil and spray with cooking spray oil.
  • Place seasoned fish fillets on broil and cook for 6 to 8 minutes until fish is golden brown.
  • Pierce and check the layers with a fork. Toss together all mango salsa ingredients in a bowl, and sprinkle salt and pepper over it.
  • Once the fish is ready, remove it from the broiler pan.
  • Heat olive oil in a non-stick over the medium flame pan and toss the tortillas for about 30 seconds.
  • Put the fish in between the tortillas and top it with mango salsa.
