Zucchini Pad Thai Noodles Recipe

Zucchini Pad Thai Noodles is a healthy and delicious Thai recipe packed of taste, low dietary carbohydrates, and gets ready in less time. However, we are using pad thai noodles sticks in this recipe. They are made with rehydrated dried rice noodles. Ingredients

  1. 30 grams pad thai noodles
  2. 2 medium zucchini
  3. 1 cucumber
  4. 2 carrots
  5. 1 red pepper
  6. 1 onion
  7. 2 tablespoons olive oil
  8. 1/2 cup crushed peanuts
  9. 4 tablespoon chopped cilantro
  10. 1/2 cup green onions
  11. 4 tablespoon basil
  12. 1/2 cup shredded parmesan cheese
  13. 1 tablespoon crushed garlic
  14. 1/2 teaspoon crushed red pepper flakes
  15. Salt

  1. Soak uncooked noodles in a bowl of cold water.
  2. Cut the zucchini, yellow zucchini, red pepper, carrots, onion, into noodle-like spiral shapes.
  3. Heat a tablespoon of oil on medium-high flame.
  4. Add the zucchini noodles, the veggies, and toss them for 1 or 2 minutes, then turn off the flame.
  5. Sprinkle on the salt, pepper, peanuts, and all herbs along with grated parmesan cheese and serve immediately.
  6. Zucchini Pad Thai Noodles is ready to eat.
