Healthy Khichdi Recipe
Ingredients
- 1/2 cup moong dal yellow split lentils (washed and soaked in water for 30 minutes)
- 1/2 cup broken rice
- 1/4 cup green peas
- 1/4 cup carrots chopped
- 1 medium-sized onion finely chopped
- 1 medium-sized tomato finely chopped
- 1 teaspoon ginger-garlic paste
- 1 green chili finely chopped (optional)
- 1 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon asafoetida
- water as required
- 2 tablespoon oil or clarified butter
- 2 tablespoon cilantro chopped
- salt to taste
Instructions
- Heat oil or clarified butter in an instant pot or a pressure cooker.
- Add cumin and allow them to splutters.
- Add chopped onions, ginger-garlic paste, green chili and saute them for 2 minutes.
- Then add tomatoes, carrots, green peas, and salt and cook till the tomatoes soften.
- Now, add soaked lentils and broken rice and mix well.
- Close the lid and cook on a high flame for 8- 10 minutes.
- Once cooked, take it out in a string plate or a bowl and garnish with chopped cilantro, and top it with clarified butter and serve hot.
