Keto Milk Pudding Recipe | Eggless
Ingredients
- 1/2 cup – coconut milk or almond milk
- 1/2 cup – coconut milk yogurt
- 1/2 cup – dairy-free coconut milk powder
- 1 tablespoon – cornflour
- 1 teaspoon cardamom powder
- 1/2 teaspoon vanilla essence
- a pinch of saffron to garnish
- 1/2 cup dairy-free caramel syrup to garnish
Instructions
- In a bowl, mix the dairy-free coconut milk powder, coconut milk, coconut milk yogurt, and mix well.
- Add cornflour and mix well.
- The mixture should be lump-free so mix thoroughly.
- Add the cardamom powder, vanilla essence and give it a nice stir.
- Take a greased bowl, and pour the pudding mixture into it.
- Cook this pudding mixture in a double boiler.
- Fill half water in a wide shallow pot and bring it to a boil.
- Place the pudding bowl into the pot with water.
- Be careful it should submerge to half and not drowns in it.
- You can also place the pudding mixture bowl in a wide pan and add hot water to the pan from the side.
- Cover the pot and steam it for 15 minutes.
- After 15 minutes insert a toothpick in the center and check if the pudding is cooked.
- The toothpick should come out clean.
- Pour the mixture into dessert bowls or a plate and pour dairy-free caramel syrup over it to garnish it.
- Add saffron strands and once it is cooled refrigerate it for one hour.
