Egg Curry Ingredients

  1. 4-6 large boiled eggs
  2. 1 tablespoon olive oil
  3. 2 medium-sized chopped onions
  4. 3 medium chopped tomatoes
  5. 2 green chopped chili (optional)
  6. 1 teaspoon ginger-garlic paste
  7. 1 tablespoon desiccated coconut powder
  8. 1/4 teaspoon turmeric powder
  9. 1/2 teaspoon Kashmiri red chili powder
  10. 1/4 teaspoon garam masala
  11. 1 teaspoon roasted cumin powder
  12. 1 teaspoon kitchen king masala or chicken masala
  13. 1 tablespoon coriander powder
  14. water as required
  15. chopped cilantro
  16. salt to taste

Egg Curry Recipe

  1. Take boiled eggs in a bowl and coat them with 1/4 teaspoon each red chili powder, turmeric powder, salt.
  2. Heat 1 teaspoon olive oil in a nonstick pan on medium flame and roast all eggs for 1 minute.
  3. Take them out on a plate and keep aside.
  4. Now in the same nonstick pan add remaining oil and heat it on medium flame.
  5. Once the oil is heated, add chopped onions and cook until light brown.
  6. Add ginger-garlic paste, green chili, desiccated coconut powder, cumin powder, kitchen king masala or chicken masala and cook for another 3 minutes.
  7. Add chopped tomatoes and mix well.
  8. You can also use tomato puree.
  9. Add salt and cook for 5 minutes on medium flame till tomatoes turn soft.
  10. Then add Kashmiri red chili powder, turmeric powder, coriander powder, and garam masala and cook for another 10 minutes.
  11. Stir in between so tomatoes and spices are cooked perfectly.
  12. Now add a cup of water and simmer till the consistency of curry gets thicker.
  13. Now add dried fenugreek leaves before adding eggs.
  14. Then add eggs and mix well.
  15. Simmer the egg curry for 5 minutes on low flame.
  16. Take out in a serving bowl and garnish with chopped cilantro.
  17. Serve egg curry hot with rice or flatbread.
