Ingredients
4carrotsfinely chopped
1tablespoongingerchopped
1/2cupspring onionfinely chopped
1tablespoonunsalted butter or olive oil
1teaspoonblack pepper powder
salt as required
water as required
coriander leaves for garnishing
Instructions
In a pan, add chopped carrot, chopped ginger, two cups of water, salt, and cover and cook until soft and tender.
Cool down the mixture and grind the carrot-ginger mix in a blender and puree it.
Now transfer the smooth puree into another bowl. In the same pan, on a low flame heat unsalted butter or olive oil.
Add the carrot-ginger puree and cook it for 2- 3 minutes. Add black pepper powder and cook for one more minute.
Healthy ginger-carrot soup is ready, garnish it with freshly chopped spring onions and coriander leaves.
