How To Make Carrot Ginger Soup

Carrots are rich in beta-carotene that helps improve eyesight. It has vitamin A, the fiber in carrots that can help regulate blood sugar levels and lower the risk of diabetes. Carrots are rich in calcium and vitamin K that is excellent nutrition for strengthening bones. Ginger contains antioxidants that can help your body fight diseases like high blood pressure, heart disease, and lung diseases. This comforting carrot-ginger soup has the eminence of ginger and carrots which has healing and immunity-boosting powers.

Ingredients

  • 4 carrots finely chopped
  • 1 tablespoon ginger chopped
  • 1/2 cup spring onion finely chopped
  • 1 tablespoon unsalted butter or olive oil
  • 1 teaspoon black pepper powder
  • salt as required
  • water as required
  • coriander leaves for garnishing

Instructions

  • In a pan, add chopped carrot, chopped ginger, two cups of water, salt, and cover and cook until soft and tender.
  • Cool down the mixture and grind the carrot-ginger mix in a blender and puree it.
  • Now transfer the smooth puree into another bowl. In the same pan, on a low flame heat unsalted butter or olive oil.
  • Add the carrot-ginger puree and cook it for 2- 3 minutes. Add black pepper powder and cook for one more minute.
  • Healthy ginger-carrot soup is ready, garnish it with freshly chopped spring onions and coriander leaves.
  • Serve it hot with baked veggies and garlic bread.
