Ingredients

  1. 4 carrots, finely chopped
  2. 1 tablespoon ginger, chopped
  3. 1/2 cup spring onion, finely chopped
  4. 1 tablespoon unsalted butter or olive oil
  5. 1 teaspoon black pepper powder
  6. salt as required
  7. water as required
  8. coriander leaves for garnishing

 

How To Make Carrot Ginger Soup

 

 

Preparation Time – 5 mins
Cooking Time – 15 mins

Serves – 2

 

Instructions

  1. In a pan, add chopped carrot, chopped ginger, two cups of water, salt, and cover and cook until soft and tender.
  2. Cool down the mixture and grind the carrot-ginger mix in a blender and puree it.
  3. Now transfer the smooth puree into another bowl. In the same pan, on a low flame heat unsalted butter or olive oil.
  4. Add the carrot-ginger puree and cook it for 2- 3 minutes. Add black pepper powder and cook for one more minute.
  5. Healthy ginger-carrot soup is ready, garnish it with freshly chopped spring onions and coriander leaves.
  6. Serve it hot with baked veggies and garlic bread.
