1medium avocado
1/2cucumber
1shallot
2tablespoonno fat plain greek yogurt
2tablespoonfresh mint leaves
1tablespoonfresh lime juice
1/4teaspoonground black pepper
1/4teaspoonground cumin
2tablespoonchopped tomatocucumber, spring onions for garnishing
1cupof water
salt to taste
Instructions
In a blender, add avocado, cucumber, avocado, shallot, plain greek yogurt, lime juice, mint leaves, salt, ground pepper, cumin powder, and 1 cup water and blend everything until smooth.
Remove and pour it into a bowl and refrigerate it for at least 1 hour.
Cold avocado soup is ready to serve now.
