Ingredients

  • 1 medium avocado
  • 1/2 cucumber
  • 1 shallot
  • 2 tablespoon no fat plain greek yogurt
  • 2 tablespoon fresh mint leaves
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin
  • 2 tablespoon chopped tomato cucumber, spring onions for garnishing
  • 1 cup of water
  • salt to taste

Instructions

  • In a blender, add avocado, cucumber, avocado, shallot, plain greek yogurt, lime juice, mint leaves, salt, ground pepper, cumin powder, and 1 cup water and blend everything until smooth.
  • Remove and pour it into a bowl and refrigerate it for at least 1 hour.
  • Cold avocado soup is ready to serve now.
  • Pour it in a soup bowl and serve chill. Garnish with cucumber, mint leaves, tomatoes, and spring onions.
