Ingredients

  • 2 cups shredded boneless chicken breast
  • 100 grams whole wheat noodles
  • 4 cups chicken broth
  • 1/2 cup finely chopped onion
  • 1/2 cup small thinly sliced celery
  • 2/3 cup thinly sliced carrot
  • 4-5 cloves minced garlic cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper powder
  • 1 lemon juice
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon dried parsley
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup chopped fresh parsley and green onions for garnish

Instructions

  • Heat oil in a large pan on a medium flame.
  • Add onion, celery, and carrots and cook for 5 minutes or until soft while stirring it occasionally.
  • Add garlic and cook for one minute.
  • Next, add shredded chicken, chicken broth, dried thyme, parsley and mix well.
  • Lower the flame and allow it to simmer for 10 minutes.
  • Once it starts boiling, add salt, noodles and cover the lid and let it cook for 5 minutes on medium flame.
  • Add lemon juice, black pepper powder, fresh parsley, and chopped green onions before serving.
  • Homemade Chicken Noodle Soup is ready, serve it immediately.
