Eggless No Gelatin Keto Milk Pudding Recipe

Ingredients

  1. 1/2 cup – coconut milk or almond milk
  2. 1/2 cup – coconut milk yogurt
  3. 1/2 cup – dairy-free coconut milk powder
  4. 1 tablespoon – cornflour
  5. 1 teaspoon cardamom powder
  6. 1/2 teaspoon vanilla essence
  7. a pinch of saffron to garnish
  8. 1/2 cup dairy-free caramel syrup to garnish

Instructions

  1. In a bowl, mix the dairy-free coconut milk powder, coconut milk, coconut milk yogurt, and mix well.
  2. Add cornflour and mix well.
  3. The mixture should be lump-free so mix thoroughly.
  4. Add the cardamom powder, vanilla essence and give it a nice stir.
  5. Take a greased bowl, and pour the pudding mixture into it.
  6. Cook this pudding mixture in a double boiler.
  7. Fill half water in a wide shallow pot and bring it to a boil.
  8. Place the pudding bowl into the pot with water.
  9. Be careful it should submerge to half and not drowns in it.
  10. You can also place the pudding mixture bowl in a wide pan and add hot water to the pan from the side.
  11. Cover the pot and steam it for 15 minutes.
  12. After 15 minutes insert a toothpick in the center and check if the pudding is cooked.
  13. The toothpick should come out clean.
  14. Pour the mixture into dessert bowls or a plate and pour dairy-free caramel syrup over it to garnish it.
  15. Add saffron strands and once it is cooled refrigerate it for one hour.
