Spiralized Cucumber Salad is a quick, easy, light, and super healthy summer salad recipe. All you need is a spiralizer and very few ingredients, veggies, and herbs of your choice. We have used spiralized cucumbers, but you can also use zucchini, carrots, apple to make this delicious salad. This salad adds a nice touch to any dish.

Ingredients

  1. 2 spiralized English cucumber
  2. 1 minced shallot
  3. 1 teaspoon olive oil
  4. 2 teaspoon lemon juice
  5. 1 diced apple
  6. 1 tablespoon tarragon
  7. 2 tablespoon no-fat plain Yogurt

 

Instructions

  1. In a large mixing bowl, mix all the ingredients except yogurt and mix well.
  2. Spiralized Cucumber Salad is ready to serve.
  3. Serve it in a serving plate topped with tarragon and yogurt.
