  1. 1 large chicken breast, diced and baked
  2. 1 ripe avocado, diced
  3. 1 cup lettuce, shredded
  4. 1 cup baby spinach, shredded
  5. 1 cup cucumber diced,
  6. 1 tablespoon extra virgin olive oil or coconut oil
  7. 2 tablespoon lemon juice
  8. 1 crushed garlic
  9. a handful of finely chopped parsley
  10. 2 cherry tomatoes, halved
  11. chopped basil
  12. Pepper to taste
  13. Salt to taste

  1. Sauté the baked chicken breast in oil for 1 minute.
  2. And toss the chicken with veggies, salt, crushed garlic, chopped parsley, tomatoes, basil, pepper, and lemon juice.
  3. Cover and refrigerate for a few minutes before serving.
