  • 1 large chicken breast diced and baked
  • 1 ripe avocado diced
  • 1 cup lettuce shredded
  • 1 cup baby spinach shredded
  • 1 cup cucumber diced
  • 1 tablespoon extra virgin olive oil or coconut oil
  • 2 tablespoon lemon juice
  • 1 crushed garlic
  • a handful of finely chopped parsley
  • 2 cherry tomatoes halved
  • chopped basil
  • Pepper to taste
  • Salt to taste

Instructions

  • Sauté the baked chicken breast in oil for 1 minute.
  • And toss the chicken with veggies, salt, crushed garlic, chopped parsley, tomatoes, basil, pepper, and lemon juice.
  • Cover and refrigerate for a few minutes before serving.
