Ingredients
1/2cupunsalted peanut butter
1/2cuptomato paste
4cupsvegetable stew
1/4cuppeanuts crushed
1teaspoonlemon juice
1bunch Kalethinly chopped
1medium onionchopped
1medium sweet potatochopped
1tablespoonolive oil
1tablespoonginger paste
1tablespoongarlic paste
1teaspooncumin
1 teaspoon spring onion
1teaspoonsalt
Instructions
Heat an instant pot and add olive oil to it. Once the oil is hot, add onion and saute them for 2 minutes.
Add cumin seeds, ginger-garlic paste, and cook for 2 more minutes.
Next, add peanut butter, and tomato paste and cook until oil separates. Add sweet potatoes, vegetable stew and bring it to a boil.
Simmer the mixture until sweet potatoes are soft and cooked. Add kale, lemon juice, salt and cook for another 2 minutes.
Pour out the mixture into a serving bowl and garnish with spring onion, crushed peanuts. Serve with cooked rice, steamed veggies, or boiled potatoes.
