Ingredients

  • 1/2 cup unsalted peanut butter
  • 1/2 cup tomato paste
  • 4 cups vegetable stew
  • 1/4 cup peanuts crushed
  • 1 teaspoon lemon juice
  • 1 bunch Kale thinly chopped
  • 1 medium onion chopped
  • 1 medium sweet potato chopped
  • 1 tablespoon olive oil
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 teaspoon cumin
  • 1 teaspoon spring onion
  • 1 teaspoon salt

Instructions

  • Heat an instant pot and add olive oil to it. Once the oil is hot, add onion and saute them for 2 minutes.
  • Add cumin seeds, ginger-garlic paste, and cook for 2 more minutes.
  • Next, add peanut butter, and tomato paste and cook until oil separates. Add sweet potatoes, vegetable stew and bring it to a boil.
  • Simmer the mixture until sweet potatoes are soft and cooked. Add kale, lemon juice, salt and cook for another 2 minutes.
  • Pour out the mixture into a serving bowl and garnish with spring onion, crushed peanuts. Serve with cooked rice, steamed veggies, or boiled potatoes.
