This vegan peanut stew recipe is a perfect vegan, flavorful soup rich in peanut, kale & tomato flavors. This soup can be best served in winters, at dinners, and at house parties.

This Peanut Stew is not only rich and flavorful but also very healthy and nutritional. It has sweet potatoes that are rich in vitamins, minerals, beta carotene, and fiber. The goodness of this soup is also enhanced with the calcium, potassium, copper, and manganese content of kale. Overall, a healthy soup for all age groups which is easy to digest.

Ingredients

  1. 1/2 cup unsalted peanut butter
  2. 1/2 cup tomato paste
  3. 4 cups vegetable stew
  4. 1/4 cup peanuts crushed
  5. 1 teaspoon lemon juice
  6. 1 bunch Kale, thinly chopped
  7. 1 medium onion, chopped
  8. 1 medium sweet potato, chopped
  9. 1 tablespoon olive oil
  10. 1 tablespoon ginger paste
  11. 1 tablespoon garlic paste
  12. 1 teaspoon cumin
  13. 1 teaspoon spring onions
  14. 1 teaspoon salt

Vegan Peanut Stew Recipe

  1. Heat an instant pot and add olive oil to it. Once the oil is hot, add onion and saute them for 2 minutes.
  2. Add cumin seeds, ginger-garlic paste, and cook for 2 more minutes.
  3. Next, add peanut butter, and tomato paste and cook until oil separates. Add sweet potatoes, vegetable stew and bring it to a boil.
  4. Simmer the mixture until sweet potatoes are soft and cooked. Add kale, lemon juice and cook for another 2 minutes.
  5. Pour out the mixture into a serving bowl and garnish with spring onions, crushed peanuts. Serve with cooked rice, steamed veggies, or boiled potatoes.
