- 2 tbsp avocado or olive oil
- 1 medium-size chopped Onion
- 2 medium-size chopped tomatoes
- 4 cups boneless chicken breasts
- 4 cups chopped spinach
- 1 tablespoon lemon juice
- 1 cup chopped carrots
- 2 cups sliced zucchini
- ½ cup tomato sauce
- ½ cup cheese ( optional)
- 1 teaspoon garlic paste
- ½ teaspoon black pepper powder
- 2 tablespoon Italian seasoning
- 1/4 teaspoon red chili flakes
- Salt

Recipe Instructions
- In a soup pot on a medium flame heat oil.
- Fry onions, carrots for 8 minutes, or until soft.
- Add garlic paste, and all the spices and combine well.
- Add three to four cups of water to the pot and allow it to boil.
- Now add chicken pieces and bring it to boil and then reduce the flame to low and let it simmer.
- Add zucchini, spinach, and cook everything for 20 to 25 minutes with a covered lid.
- In the final stage add lemon juice and stir well. Italian Chicken and Vegetable Soup is ready to serve.
- Take it out in a serving bowl and sprinkle cheese ( optional ) on the top.
