- 1/2 cup unsalted peanut butter
- 1/2 cup tomato paste
- 4 cups vegetable stew
- 1/4 cup peanuts crushed
- 1 teaspoon lemon juice
- 1 bunch Kale, thinly chopped
- 1 medium onion, chopped
- 1 medium sweet potato, chopped
- 1 tablespoon olive oil
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon cumin
- 1 teaspoon spring onions
- 1 teaspoon salt
Vegan Peanut Stew Recipe
- Heat an instant pot and add olive oil to it. Once the oil is hot, add onion and saute them for 2 minutes.
- Add cumin seeds, ginger-garlic paste, and cook for 2 more minutes.
- Next, add peanut butter, and tomato paste and cook until oil separates. Add sweet potatoes, vegetable stew and bring it to a boil.
- Simmer the mixture until sweet potatoes are soft and cooked. Add kale, lemon juice and cook for another 2 minutes.
- Pour out the mixture into a serving bowl and garnish with spring onions, crushed peanuts. Serve with cooked rice, steamed veggies, or boiled potatoes.
